What type of bindings will match the holes?

I believe it is probably the NATO model 120-M bindings. You should be able to by them off of Amazon.

How do I determine which size (200 or 210) will best suit my needs

The larger you and your gear load are, tends to suggest a larger ski.

Are these skis in unissued condition, or have they been used?

The two pair I received were in unissued, new condition.

Can these nato skis be shipped to Canada?

No I am sorry they cannot.
